Hello Dolls!
It's that time of the month, stirred with a bit of a melancholy mood and we have the perfect setting for baking cupcakes!
My friend Viktorija and I met up yesterday for Starbucks (so good!) and then I was feeling like I wanted to bake...and not fail for the first time. So, I suggested that we should bake some oreo cupcakes. We headed to Tesco and picked up some Oreos and butter, then we went to bake!
So here is the recipe and process documented with some pictures ;)
Ingredients:

- 175g butter at room temperature
- 165g caster sugar
- 3 eggs
- 40g cocoa powder
- 125g flour
- 1 tablespoon baking powder
- oreos
(I also bought some soft cheese....but the frosting failed so lets just ignore that part)
Method:
(pre heat the oven to 180 degrees)

- First thing we did was put the butter and sugar in a bowl. Then using a mixer we whisked the two together, this created a smooth texture.
- Second thing that we did was measure the flour, cocoa powder and baking powder. We then mixed the 3 together.
- We then added the 3 dry ingredients to the butter/sugar mixture. Adding small amounts at a time in order to make the mixing in easier.
- Next, we took a pack of oreos and crushed them in a separate bowl. (I must say this was very therapeutic....if you are ever angry just buy a pack of oreos and crush them haha...it helps)
- After acting like a bunch of 5 year olds with the oreos, we added the crushed biscuits to the mixture. Then mixed everything together and voila!!
- After the mixture is complete, I set up the cupcake cases while Viktorija filled them with the mixture. Then we placed them in the oven for 17 minutes...during this time I made Viktorija a Baileys Coffee and we attempted making frosting...but failed haha so we decided not to have the frosting :)
- After 17 minutes we took the cupcakes out and let them cool for another 10-20 minutes.
- We ended up making 20 Cupcakes...so what do 2 young women do with 20 cupcakes? Well, I left some for the family and then the rest I gave out to my neighbours who have young children :)...Spreading the love <3
- FINALLY!!! The last thing left to do is to eat the cupcake preferably with cold milk :)

The Verdict:
My family loved the cupcakes and Viktorija said they taste just like brownies, which I agree. The cupcakes were harder on top and then soft in the middle with crunchy pieces of oreos.
Also, my neighbours said that the cupcakes were amazing so I guess this was a success :)
